(& doughnuts & mini muffins)
Here is what you need:
- 2 1/4 cups flour
- 1 cup sugar
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 tbls poppyseeds
- 1/2 cup melted butter
- 2 eggs
- 1/2 cup vanilla greek yogurt
- Juice and zest from 2 large lemons
Preheat oven to 350 degrees. Mix all the dry ingredients in a bowl (left side of list). In a different bowl melt the butter, then add the eggs and yogurt. Zest both lemons, then squeeze out all the juice and add to the mixture. Mix everything from both bowls together. Bake muffins 15-20 min till lightly golden and a toothpick poked down the middle comes out clean. 10 min for mini doughnuts and 10-12 for mini muffins.
Lemon Glaze
Mix 2 tbls of lemon juice and 1 cup of powdered sugar. If it’s too thick add a little bit of water. Just drizzle over the top. Add sprinkles for the kids!
